We usually spend holidays like Christmas, Thanksgiving and Easter with my husband’s extended family and the meat of choice is ham. There are always plenty of leftovers and we’re usually sent back home with several bags of various pieces of ham. I try to use them in different dishes from ham sandwiches to soups and stews. My favorite is this lima bean and ham stew. It makes a really good hardy, flavorful dish. It’s really good on a cold fall or winter day and the perfect way to use up leftover ham.

Of course ham is good in quite a few bean recipes. In fact, I end up using little end pieces and any ham bones and cook them right along with any type of dry beans. It adds a lot of flavor to your pot of beans. Try cooking a pot of pinto beans along with some leftover ham or ham bone and serve it with a warm cornbread for a tasty southern style supper. The same goes for putting on a big old pot of bean soup of course. Just try it… you’ll be amazed how much flavor even a little bit of leftover ham adds.
